Ingredients
Vegetables
- 2 brown onions chopped, skins composted
- 1 long green chili chopped, stem composted
- 2 tomato chopped, no need to cut out the top part
- 2 cloves garlic chopped, skins composter
- 2 potatoes washed and chopped, skin on
Spices
- 1 tsp coriander ground
- 1/2 tsp chilli flakes
- 1 tsp ground tumeric
- 1 tsp Shan vegetable masala ground
Rice
- 2 cups basmati rice
- Oil
- Salt
- 1 tsp cumin seeds
Method
Soak rice for 30 mins or overnight.
Wash rice and cover with water until about a cm of water is covering it. Cook in rice cooker with a small bit of oil, pinch of salt, and cumin seeds.
In a medium saucepan, heat oil. Add onions and cook until brown and fried.
Add chilli, garlic and tomatoes and cook until soft.
If the pan gets too dry or starts to burn, add some water.
Add potatoes and spices and cook until soft.
Serve with the cooked rice.
